I believe I'll go for the Long Beach. Saving $300 is like a free cam, or a free amp which I'll apparently need to drive my speakers.

Everyone's expectations are different. Try it with the built-in amp first. If it's not powerful enough for you, you can always add an additional amp later.

But the Focals need 60 watts RMS and the Long Beach can only put out 25. That's a big difference.

Any amp will be able to move any speaker. The diff is the kimd of signal produced taking them to the limits. For example a 25w amps amp trying to move 60w speakers will get into the distortion stage ( square signal ) before get into the max speaker capability. That can burn a speaker still having more room to get the speaker moved
On the other way around if you have a 60w amp trying to move a 25w speaker the speaker could get into a constant excursion stage depending on volume and that also can get damaged the speaker.
On both stages the ppl hearing the music should be able to feel when is enough.
NORMALLY an amp should be at least DOUBLE power of the speaker capability to be safe from square ( distortion ) signal and speaker being able to get audio peaks, but these peaks can't be constant. But if you know the limits, you can play with the values reversed.

Car audio is more complicated than I would have thought. Looking through the amps Retromanufacturing has listed for the 72 Charger, this Technophonic appears to be the only one I might be able to use. But this premium center dash speaker has "TrueRating™ power handling: 90 watts RMS/160 watts MAX power." That's 25 watts RMS more than the Technophonic amp can do. But if the amp needs to be able to put out double the watts needed for the speaker, than it would take an amp that could put out 180 RMS watts to power the premium center dash speaker? Or 320 watts?

Not really huge diff between auto, home or profesional audio systems 160 could be PMPO. PMPO is peak music power output which is a peak for a minimal time period ( it uses to be 100 times more than the RMS but is not a cientific value really), 90 RMS is Root main square, which is like the average of a sinusuosoidal signal. Take the RMS as the reference. However don't take this as a mandatory. This rule can be violated anytime under controled conditions. You can use a 90 watts speaker with a 90 watts amp as far you can hear when the distortion floats on and stopp on that moment to raise the volume more. At the end, you won't be able to reach that volume into the cab LOL, EVEN LESS WITH 2, 3 or 4 speakers with that power

I like those class D amp. That's what the one in my T/A is. So small, and run so cool compared to their power equivalent o 20 years ago.
