And idea how to get the AC pulley assembly off the unit? I got the center bold out that holds it together, but the pulley assembly itself is either stuck (which it turns fine) or I need something else.
UPDATE - Sorry, went back to the post about installing and says I need to insert a "cap screw". Assuming that's a basic bolt to tighten into that hole.

Why do you need to remove the pulley?

Get the correct sized bolt and thread it in while holding the pulley. Could be removing the pulley to clean the compressor or replace the shaft seal like I did before getting the system up and running.

I'm replacing the water pump. There's a metal shield behind the pulley that needs to come off in order to remove the old pump. From what I've gathered, it seems to be the only way to get to it. Unless I'm wrong?

you don't need to remove the pulley. Water pump comes out from water pump housing without need to even remove the compressor.
Now the WP housing, is true, you need to remove the compressor, but not the pulley, just the compressor as a full assembly. The "metal shield" is the compressor bracket itself. Keep the pulley in place and pull out the full compressor assembly. The related bolts are accesible with pulley in place. The bolts hidden by the pulley are just for the bracket
You don't need even to disconect the refrigerant lines ( if charged ), just pull it up and move it up to the fender. Hoses are flexible to make it.... or simply over the intake manifold or radiator.

I think this is an Small block bracket and compressor, but the assembly will come like this on a Big Block too there is also a 9/16" bolt on a bracket over the block front rail, then the bracket to the coil mounting provision. That's all anyway, the pulley itself is usually easy to be pulled out. No need for special tools. Just remove the bolt and pull it out. It could be a bit stuck. I removed it couple of times even with my hands.

I got it in, but did remove the pulley and that wasn't bad. I'll upload pics tomorrow as I'm heading out now.

yes as I told, pulley is easy to be removed, the hard part is the clutch from the pulley needing the extractor. But you don't need to remove pulley to get access to the plate since that will come with the compressor as an assembly. The bolts you need to get loosen to remove the WP housing are not hidden by the clucth.

Also. Without digging too deep into Google yet, this has always had my curiousity. How vital is it and what's the part name?
